Moroccan Jewel- La Sultana

Romantic was the last thing I was expecting from our trip to Morocco. Given it was the end of January, the main prerequisite was just ‘vaguely warm’.

Yet I was instantly enchanted- the maze of the medina, the hidden courtyards of the riads hiding behind imposing and ornate doorways, the peaceful rooftops overlooking the busy streets and shops. It is a city of juxtapositions.

Our host welcomed us with sweet fresh mint tea and delicate almond pastries, before showing us to our rose filled room- desert themed with a ceiling full of stars.

After our first day getting lost in the medina, we established what became a daily routine- a glass (bottle) of wine on the rooftop of the riad as the sun went down.

For our first dinner we headed to La Sultana. It was beyond stunning. Candle lit and (once again) rose laden tables, in the most stunning courtyard, accompanied by a sitar player.

 Given our limited knowledge of Moroccan food (beyond tagine), we opted for the tasting menu:

Appetizers

Traditional Harira soup and Dates «Daba Brika» style

Starters

Cinnamon scented Pigeon Pastilla
Prawns with ‘’Pil-Pil’’ spices
Refreshing carrots salad with original marinated olives
Eggplant quenelles

Ocean delight

Monkfish medallions and raisins, «Rabat style»
Chermoula Prawns, celery and lemon confit
Tagine of Oualidia Mussels

Meat and poultry

Braised Beef «M’rosia» with toasted almonds
Chicken with sweet onions
Couscous with sweet onions & chickpeas

Deserts

Milk and almond Bestilla
Homemade ice cream
Traditional mint tea and petits fours

Each course was an incredible experience, even those flavours I thought I knew- I was amazed by the rich caramel dates and the buttery flavour of the couscous. The biggest surprise for me however was my love of the pigeon in the sweet yet savoury Pastilla (a meat filled pastry, sweetened with flavours of cinnamon and almonds).

The evening at La Sultana was not only one of the most magical of my life, but a perfect start to an incredible trip.
